My Vegetarian Daughter’s Quick Sustaining Dinner

I came up with this when Ruth, my 12-year-old vegetarian daughter, had a sausage sizzle after her soccer practice one day recently. Well, she doesn’t eat sausages, so I sent her along with a tub of this quick, sustaining dinner. She liked it so much she had it for her school lunch the next day, and now she requests it even if there’s not a sausage in sight.

MY VEGETARIAN DAUGHTER’S QUICK SUSTAINING DINNER

Serves: 2-3

Time: 50 minutes


Ingredients:

Roasted goodness

  • 1 tin chick peas, drained
  • 1 medium sweet potato, peeled and cut in 1.5 cm cubes
  • 1 punnet cherry tomatoes
  • 1 tablespoon extra virgin olive oil
  • ¼ teaspoon flaked salt
  • 5 sticks kale, torn from stem and ripped up

Cauliflower & broccoli ‘rice’

  • 300 grams cauliflower, roughly chopped
  • 100 grams broccoli, roughly chopped
  • 20 grams extra virgin olive oil
  • pinch salt
  • freshly ground pepper
  • lemon zest, to serve

Method:

Roasted goodness

1. Preheat oven to 180°C.

2. Place chick peas, sweet potato and tomatoes in an oven tray, tumble with olive oil and salt and place in oven for 30 minutes or until sweet potato is tender, tomatoes have relaxed and chick peas are slightly crisp. Shake or stir, then add torn kale and roast for another 10-15 minutes, tossing kale every 5 minutes, until it is crisp.

Cauliflower & broccoli ‘rice’

3. Place cauliflower and broccoli into mixing bowl and chop for 2 sec/speed 5. Scrape with spatula and chop for a further 1 sec/speed 5 to achieve a uniform rubble.

4. Add olive oil, salt and pepper and cook for 4 min/Varoma/Reverse/speed 1. Scrape down and cook for a further 4 min/Varoma/Reverse/speed 1.

Spoon ‘rice’ into a bowl and top with roasted goodness and grate lemon zest over the top.
